The Free Pour Margarita Recipe

Yes, another Margarita recipe. I'm not even mad that half our tequila recipes on here are going to end up being Margaritas. This one here, is named the Free Pour Margarita. Firstly its good to note that easysipping started as a Instagram account called "Free Pour" when myself and the easysipping team (When i say team, I mean theirs 2 of us. it just sounds more professional to say team. but who am i fooling?) when me and the free pour team, use to work in a bar together, after we would close when we was on shift together, we would bring in a bottle of tequila and make ourselves margaritas whilst we updated the Instagram. after awhile we tweaked our margaritas, till we had a recipe we was both happy with. which is this one (Hence the name, see, it makes sense) 

Ingredients

  • 45 ML 100% Agave Tequila Blanco
  • 10 ML Mezcal
  • 10 ML Cointreau
  • 30 ML Fresh Lime Juice
  • 1 Pinch Pink Himalayan Salt
  • Top Salted Lime Air See Recipe Below

Instructions

  • Add all ingredients other then the salted air to a shaker with cubed ice
  • Shake till cold
  • Fine Strain into a chilled coupe
  • Garnish with dehydrated Lime wheel

Salted Lime Air


Ok, with most margarita, you get a salt rim. ever wondered why? its not just tradition. it enhances the overall flavour of the cocktail. Salt stimulates your gustatory receptor cell, which makes up your taste buds. It helps balance out the sweetness of the orange liqueur and the tartness of the lime juice. It also increases saliva production, to make the cocktail mouthwatering. I like to think of salt as being the bridge between flavours. It helps flavours blend easier. I highly suggest you make yourself some saline solution (Salt and water) and add a tiny bit to your cocktails in future. You dont want to taste the salt, but you want to taste the affects of the salt. which is important to take note of. With this margarita, we decided to top the drink with the salt foam, rather then use the saline drops. So that the foam slowly mixes with the cocktail the longer you leave it. so you slowly taste the difference it makes.
To make the Citrus salt air, you will need 5 ingredients.
  1. Water - 100ML
  2. Fresh lime juice - 50ML
  3. Salt, any will do, we prefer Pink Himalayan salt - 1 tsp 
  4. egg white powder - 1.5g 
  5. Xanthan Gum - 1g
You need to blend all these ingredients together, then use a fish tank pump to create the bubbles. I know what you're thinking. "wow wow wow, one minute you're talking me through the ingredients, then you jump to a fish tank pump, with no explanation" well hang on would you. Let me finish.
